Trahanas

Trahanas is a pebble-size pasta that is fried, used in soups and stews the same way as rice or other pasta, and made into soups that are Greek favorites.

Ingredients

650ml trahana
2 large ripe tomatoes, grated
3-4 tbl sp tomato paste
1 tbl sp sugar
1 stock cube, chicken or beef
5-6 tbl sp OLIVO,5 Extra Virgin Olive Oil
3-4 cups water
salt, pepper

Procedure

In a pot, bring the water, the tomatoes, tomato paste, stock cube, sugar, and the salt and pepper, to boil.
Allow the contents of the pot o boil for a few minutes, then add the oil and the trahana.
Stir well and allow to simmer.
Allow to simmer for approximately 1 hour.
Remember to stir often and if necessary add more water.
